Is anyone aware of any American breweries that are putting wort that was cooled/inoculated in a coolship into barrels that have not been inoculated (either directly or with previously inoculated beer) with any additional microflora?
de Garde in Tillamook, Oregon spontaneously ferments most (maybe all) of it's beers. Block 15 also has a series of spontaneously fermented beers called Turbulent Consequence.
Below is a list of US breweries which have coolships (which can be used to permit spontaneous fermentations). I know that Allagash has produced spontaneous fermented beers. “Several other U.S. breweries also have coolships, including California's Russian River; Hill Farmstead in Vermont; Peekskill in New York, Block 15 in Oregon; Jester King in Texas; and Maine's Allagash Brewing.” I know that Crooked Stave has installed a coolship but I do not know if they have used it for spontaneous fermentations. Prairie has a coolship and the first beer from it is in barrels right now. It was brewed with Jeppe from evil twin.
Not yet. Hopefully soon! Although as far as I know his current barrels/foeders have all been inoculated though? I believe St. Somewhere out of Florida utilizes spontaneous fermentation. Not sure about barreling though.
