spontaneous fermentation stout????

    I know that no one would ever brew a spontaneous fermentation stout :wink:, but if you were too what would be your grain bill?

    I guess that this would be a start - but would you tweak something to compliment the sour? I'm not thinking Flemish but more towards something like Cantillon would make :wink::wink:.

    Go towards chocolate not roasted and add oats for body for after the Brett hits?

    Cantillon posted a picture of a spontaneously fermented stout they're brewing on their facebook page the other day, so people are certainly trying it.
