stale German Saphir hops - good for lambics?

    I have a bunch of stale saphir hops. think i can use them for a lambic?
    i've never brewed with Saphir before

    Saphir is a Hallertau derivative and low to very low AA%. seems to fit the bill. i say go for it. unless you have some fresh Strisselspelt laying around and 12 months to wait.

    the purpose of the hop in this instance is almost entirely for their preservative ability. pay careful attention to the recipes hop schedule. you don't want a strong hop presence, stale or not.

    actually, funny you say that.
    from what i've read, the more recent thinking's the opposite. dump a shitload of very stale hops (i.e. 4 oz into 5 gallons). you'll get hop characteristics but the bitterness will fade in the 1-3 years of fermenting and conditioning.

    They aren't ready unless they stink like aged blue cheese. Store them at room temperature in a jar until they get good and funky.
