Standard American Lager - Yeast and temp

    Long story short...

    Father in law wants to brew a light lager. I researched the needed equipment additions I needed for my set up and he bought the grains, hops, and yeast.

    I bought the temp controller and procured the fridge. I now see that the recipe he picked is as follows:

    7lbs Pilsner Malt
    .75 oz hallertauer hops (60 min)
    .50 oz hallertauer hops (15 min)
    Wyyeast 2112 California lager yeast

    Obviously the yeast isn't a true lager yeast and therefore doesn't require the low temps. I am interested in some help figuring out optimum fermentation temperature schedule. Is cold crashing an option I should look into? If it matters, I do plan on trying my hand at kegging this beer.

    Did a cal common using that yeast. Started at 58F for the first few days then allowed to rise to 68 over a week and held there until finished. Not exactly a standard American lager, I hope this helps. If cold crashing is something you want to do and you're kegging, I would go ahead and cold crash in the keg.

    Is is a true lager yeast and can be used at traditional lager temperatures. It's just that it ferments fairly clean at higher temperatures, where it is traditionally used for the California Common style.
