Starter: can I delay it's use?

    Have a stir plate starter going, as I was planning on brewing on Sunday.
    Due to unforeseen circumstances I'm not going to be able to brew until the following week.

    Any harm in letting it finish as a starter, fridging it for a few days, decanting and the re-adding some fresh DME-wort and running it on the plate for another day or so?

    Or am I better off starting the process again with a new pack of yeast (it's Wyeast Belgian Wit 3944) ?

    Just decant it and move along. Youre basically just stepping the yeast up like if you harvested some. Your beer will probably be better this way, just try to do or do another starter within 2 weeks and keep it in the fridge until then.

    I stepped up some Conan from a can of heady topper this way. I ended up with several ounces 3 or 4 starters later. Be careful to sanitize everything. I always stored it in a sealed ball jar in the fridge.

    Groovy...

    It's already in a sanitized Erlenmeyer flask, with a sanitized foam stopper. I'm thinking I should transfer to a sanitized glass jar with a screw top lid if it's going to be in the fridge for a few days.

    Leave it in the flask. On brewday, let it warm up, decant and use some of your fresh wort(boiled/chilled) to replace the liquid. It will reactivate your yeast and really get them going.

    I'd skip the last part. Just refrigerate when it's done, then decant on brewday.
