starting a cellar.

    What does starting a cellar entail? Do you need to keep the beer refrigerated? And if so, what temperature? Right now, I'm just keeping my beer in a dark corner of the basement, as it's consistently around 60 degrees F and it's dark most of the time except when I'm down there to drum. Should I keep the beer in a closet or something? Any help would be appreciated. It'd also be nice to know how long certain styles should be aged and whatnot

    I knew all these answers then plum forgot 'em. Then I used a search function and found lots of discussions about temperatures, and styles, and closets and basements, and even specific bottle cellar-life recommendations. Then, darn'dest thing, plum forgot again.

    you keep them where they are and drink them when you want.

    I put beers in a wine box in my mostly dry basement. Never had a problem. I'm sure there are better ways to do it but seems like something hard to screw up.

    Keep it relatively cool and out of the sunlight.
    Don't age IPAs.
    Don't age things you've never had.
