    An alternative viewpoint on mashing regimes is provided by Dr. Charlie Bamforth on a Beersmith podcast. I would encourage folks to listen to the entire podcast (lots of great information here) but the aspect of multi-step mashing starts around 25:45.

    Brad Smith provided a summary line of: “Charlie explains why a single step infusion mash is perfect for just about any barley based beer, and additional steps are not really needed.”
