Stone RIS and Old Rasputin cellaring

    My intention would be to cool off some of the hops, make them a little sweeter, perhaps. Would this work if I hung on to a few for a year or so?

    A couple weeks ago I cracked a bottle 13 Stone RIS and was blown away (again!) by how good it was, so I went out and bought a case.

    Opened a 13 Stone IRS a few months ago and it was really good. Opened a 14 about a month ago and it definitely needs some time.

    Stone ris is a killer beer to cellar. Stone is one of the few breweries around completely and totally embracing cellaring. They want u to age the beer and see the changes which are amazing.

    Did a 2008-2013 vertical of IRS two weeks ago. They all were badass.

    My experience with Old Rasputin (based on notes at fresh, 1 year, 2 years, and 3 years old) is that the hops fade, and the acidic and roasty espresso flavors take over. so not sweeter, but instead more of dry finish.

    I am drinking my last bottle of 2012 Stone IRS and it's drinking like a liquid dessert. Hops have almost completely faded too.
