    I know aging IPAs is sacrilegious, but does this have enough alcohol content and malt presence to make it worth a shot?

    The beer was amazing fresh. However, I still have one bottle left and am pondering what to do with it. It is already well beyond its "enjoy by" date. Drink it ASAP? Or take the wild chance that it ages into something interesting?

    Drink it sooner than later. The hops will fade out over time.

    If I had one this old already, I would sit on it for 2-5 years and see what happens. It was wonderful fresh, but so damn massive, I'd be interested in knowing what would happen to it. At almost 6 months old at this point, its not going to taste like it did fresh, so why not buckle down for a few years and see where she takes you.

    If it sucks, you're out a few bucks. If its awesome, well, you're gonna have a pretty rare (not popular to age hoppy these days, 98% of it has been drank already) and good bottle.

    Roll the dice I say.
