Have you tried it fresh? It's an incredible saison fresh. And the Stone version is my favorite of the three. If you haven't had it fresh yet, don't cellar it - drink it.

Gotcha. It's got a fantastic fruitiness (IMO that's its best quality) and I'd just be afraid of that diminishing after a year. Another thought would be to attempt to trade for a couple. As far as I know, it still sits on shelves and is inexpensive.

I thought it tasted like the prep table of an Italian restaurant, and no amount of time is gonna help that.

Then again, I enjoyed drinking one fresh. It just put me in the mood for pasta. It's a unique experience for sure.

No guarantees of a next year from what I hear. There wasn't a 2011 version...

Yeah I didn't think collabs got brewed more than once. Can't think of any off the top of my head.

I thought the herbal notes did very little to help that beer. Perhaps a year would allow those to fade a bit?

I'm no expert, but would think that the herbal notes that the brewer intended us to experience would just fade with time, and make the beer less than it should be. Drink up!

I drank one from the first batch over the summer (a year or 2 of age?) hoping that the herbs would have died down. They didn't. Am I the only one who thinks sage is gross?

I really enjoyed it fresh. It was especially good with an herb roasted chicken. And the sage was a little strange, but really cool with the chicken.
I'm pretty sure this is a collab they have done more than once as I first had it two years ago and again this year.

I loved it. So unique, so different, but well done. I has both the Stone and Victory versions, very herbal, earthy tasting. I wouldn't want that to die down any.

Stone hasn't brewed any of their collabs more than once except this. And they only did that because Victory and DFH were going to release it too, so they were making it available for people to compare. I was disappointed when I saw all three on the shelf when I was in CA cause I was already spending like $200 and I couldn't get anything else :slight_frown:

A few Victory peeps told me the 3 breweries planned to do it in 2011, but Dogfish was maxed out production wise so it was tabled until 2012.

YES! I think that sounds super interesting. The herbal, flowery flavors would mesh intriguingly with barrel flavors.
