store temp = serve temp question

    I read the following in a BA article..
    if you cellared your beer too cold, then serve it immediately you'll get less carbonation, less aroma and less flavour. You'll also risk numbing your palate. Use the store temp = serve temp rule and you'll be fine.
    Now my question: I sore all my beer in the fridge. Beers I feel should be warmer I leave on the counter for 10-15 minutes. Am I wrong in doing so in your opinion? Is this specifically about beers that have gotten too cold?

    Beers are more flavorful closer to room temperature. I leave all of my beers out of the fridge for at least 20 minutes--longer for stouts and barleywines.

    You can pour the beer cold and let it warm up in your glass. As long as you don't chug the beer in first five minutes of pouring it you should be fine.

    As I read it, the passage is specifically about beers that are stored too cold and is describing the effects of drinking it too cold. So I do as you do, which is to let some beers warm for 10-15 min before drinking unless I'm specifically interested in experiencing what happens as the beers warm and the flavors and aromas "expand" and become more complex while the beer warms to a good serving temperature.

    Coors Light has more flavor when warm than when the mountains are blue...it's just bad flavor. That's why I don't keep any in my fridge :slight_smile:
