We have two in my area, one a pretty serious 'craft beer' space that will definitely break out cellared bottles and kegs from time to time and the other a really funky little deli/bar/corner store that maintains a small display by the register that features wines and random older bottles from time to time.
I got 2015 BCBS late last year at the former for 20$ and have grabbed a couple years of abyss at the latter for 15$

Do you all have anyone locally that engages in intentional cellaring?

In Charlotte we've got the Duckworths Cellar, a veritable goldmine of cellared beer. I've had some real gems there, including some 2017 BCB Barleywine. It's definitely pricey, but you get what you pay for.
