You can keep stuff in your fridge, but most people have their fridges far too cold for beer.

So set accordingly, and if you do use it for other things (like ya know... food n stuff), I wouldn't recommend long storage or cellaring. Just put it in and not too far back (on the door is often a good spot because it's the warmest in the area), and for certain styles pull the bottle out, and let it sit for a few minutes before opening if it's really cold.

Oh and another option I also like, is if you bring something home you want to drink that requires say a warmer temp (like a stout) but needs some fridging... put it in for 15 minutes and then crack'er open and have at it I say

    Cold temperatures slow chemical reactions.

Chemical reactions are what cause changes (positive and negative) in beer.

Some styles are more susceptible to negative changes than others.

Given all that, my rule of thumb is anything that isn't being kept specifically for cellaring purposes gets put in the fridge, space permitting.

With few exceptions, I always refrigerate hoppy IPA's as soon as they come home. It can buy you a lot of time with some of these beers, in particular, Hopslam. Out of the fridge the Hopslam drinks well into later summer months.

I also will move beers into the fridge if they are drinking exceptionally well and I don't think they will get better with age. I put a handful of KH's in the fridge two years ago, and there is a significant difference between how they are drinking now vs. a buddy that properly stored his in a cellar.

    That's exactly how it ages.
