If you're serious about aging stuff, I believe some people on here invested in a wax dip/bath so oxygen cant get past the bottle cap. Dip the bottle tip. Seals it tight for long time. In addition to 55 degree cave temps you can transform some beers into pure magic.

I'm of the belief that everyone should have a beer drinking gathering every six months to avoid this problem. You'll quickly identify which beers are truly important to you and either hide them or quickly consume them so you don't have to share, and your beer friends will bring some beer you are happy to try as well, especially as the tradition continues and people notice the friends who brought shitty beer aren't invited the next time.

Any place that is dark, cool and doesn't fluctuate much, and dry should work really. I use shipping boxes and a closet that stays pretty consistent temp and light wise and so far has worked for all kinds of styles.

You may also wanna buy less. I know, blasphemy! But do you really need 5 bottles of the same beer? Probably not, but to each their own I suppose.

The problem with that is when you have generous friends, and you end up with more beer AFTER the gathering than you started with.

    Don't invite the over-generous friends ?

    Just kidding.

Stating the obvious: don't think you can beat a fridge. It's dark most of the time, in addition to cool. I was losing weight, and some beers were left for a long time, "best before" expired. But that date must be for room temperature and non-optimal light conditions. Still good.

Just another possibly-not-fully-formed thought. What about a large cooler? That would insulate from the heat and keep them in the dark, especially if you stuck it in the bottom of a closet or something?

My "cellar" is my storeroom. Its dark most of the time as there are no windows. There is an A/C duct run to it but there is no path for return air so it only works marginally well. Its a pretty good storage area for beer but I have had a few that got "lost" and aged too long.

Like many of the others, I've quit buying so much that it can't be drunk in a reasonable time.

this short and simple thread has given me the motivation to not overbuy, to not have new beer FOMO, and to go ahead and drink and/or share things that have been taking up space. a much needed realization for me at the moment. beer is made to be drank, and drank is what my beer will soon be!

    1) Do a bottle share with friends and you’ll be providing hoppy stuff to deplete your surplus (or give away beers to your guests) and they can bring other styles.
2). Do a trade quantity hops given away for a cellar beer in return.
3). If you have anyone at work that appreciates good beer (styles you have), give them one to try out that you can vouch for as being really good. Make friends at work by being generous.

Anyone think about what happens to their cellar if they kick suddenly and their family isn't into beer? I'd hate to think of my cellar going to waste and getting dumped out. Maybe I should step up my drinking

If you have plenty of beer ready to drink then the obvious answer is to use some of it up.There is no point in buying much more everyday drinking beer than your predictable consumption.Beer for ageing of course doesn't need to be kept under refrigeration and is in fact better at cellar temperature.
Robert Parker, the wine guru, often said that a lot of the wines he was invited to taste had faded past their best. The result of over buying and not drinking them at the optimum time.

I have a second full sized upright refrigerator for beer, and it's pretty full.

I keep my "overflow" in a corner of my utilities closet. Wherever you choose to store your beer, just choose somewhere with a relatively stable temperature.

I store my beer in the cellar. Never had an issue with a beer. I am well under 100 12oz bottles and less than a dozen large format.

Been drinking it down for a few years and will not be going back to load up again.

    Enjoy
