Storing leftover pumpkin puree

    After brewing a pumpkin porter yesterday and making pies and cheesecake today I still have plenty of puree leftover. If I wanted to brew again next Saturday will it last in the fridge, or should I freeze it ?

    Freeze it. In addition to keeping better, the freezing will break down cell walls and make the pumpkin stuff more accessable to yeast, taste buds, etc.

    I agree that freezing is perfectly fine, but am struggling to understand why you have so much pumpkin puree that you brewed a beer and made pies and cheesecakes with it and still have some left over. Now you are going to brew back-to-back pumpkin beers? That's gotta be some kind of record! I'm good for about one per decade. Or maybe even per lifetime - it remains to be seen whether I'll do a second one.

    Saturday I used two pumpkins strictly for beer, yesterday I baked and didn't realize how much pulp I'd have leftover so I'd rather save it and brew again than throw it out after spending so much time scraping out the meat from the gourds.

    A typical 5 gal batch will take about 60 oz of pumpkin. That's an all day project! :astonished:

    you could always make some gnocchi with it. Or some pumpkin bread. I used to make a nice spicy pumpkin cream sauce for pasta back in the day. There's no limit to what you can do with some starchy veg and a little imagination.

    As long as it turns out better than the first pumpkin porter I made with a Brewer's Best kit. Nothing but spices and it tasted just plain awful.

    I've been there with a holiday prowler I made when I first started brewing. Looking back on it I should have made another beer to blend with it--even if it had to be pouring from two bottles into a pint glass. Lesson learned. You can add spices to the end of primary if you think the beer is weak.
