Samuel Smith Organic Chocolate Stout is an absolute must try.
Rogue Double Chocolate Stout is really good as well as Young's Chocolate Stout. Also, I feel like Lagunitas Imperial Stout is under appreciated. I actually like it as much as Old Rasputin.

I second the opinions from everybody in this thread. But ultimately, you just have to go out and start to experiment. Every time you see a stout, buy it (hopefully you can get single bottles) and find out for yourself if you'll like it or not. That's what I've done over the past 15 years. Not sure just from reading the label? Buy it. Drink it. You may find some that you don't care for. You may ending up finding some that you fall in love with (specific breweries). But the more you try, the more of an opinion you'll form as to what kind of stouts you prefer. Personally my favorite style is Oatmeal Stout, which not many breweries seem to get right. Samuel Smith's is a good benchmark.

Really though, just get your hands on every stout you come across. Plain and simple.

Don't forget Deschutes Abyss if you can get some. That was the beer that got me into stouts.

You might also seek out Eclipse if it's around, or trade, can be bought at online stores too. Any variant , they're all great but a bit pricy. Bells Kalamazoo Stout, Expedition in season.

Everyone here makes great suggestions but the best by far is simply go out and try as many as you can.
Still I'm gonna recommend a few I love.

If you like Guinness you can't go far wrong switching to Guinness Extra stout,
    Also try...
Innis and Gunn Irish Whiskey Cask finish (Scotland)
Dungarvan Coffee and Oatmeal Stout (Ireland)
    Belfast Black (Northern Ireland)
    Brains Original Stout (Wales)

These are all UK and Ireland offerings so you may have access to some and not to others but when you come across these...But enjoy your Stout journey it will be a tasty one!
