Stouts that are 'off'

    so I know when a dry hopped beer goes bad you get that semi-sweetish tea taste and the hoppiness is just kicked. But it's harder for me to tell with these stouts. I've had a couple, Sam Smith's and Old Rasputin come to mind, that have this overwhelming molassesy flavor. I think that might be there to an extent in a good bottle.. but are these off or do I just not like them?

    And then I guess a further question, can I do something about it if they are off? Can I bring the rest back? Can I complain? Am I dick?

    I get a soy sauce flavor from some stouts that I think is an off flavor. In terms of fixing the beer, there is really nothing reasonable to do.

    Define "bad".

    Plenty of dry hopped beers will simply have diminished hop flavor with age but does not go "bad". It is also not fair to every dry hopped beer to lump them together, too much variety.

    Stouts are a lot the same, they will all change differently. Much of where they go depends on where they started.

    It sounds like you need to develop your palate more, gain an understanding of the style and how they change. I think the term bad is simply being used for flavor you do not like.

    Bringing them back or complaining when you are not even sure if something is off or you just don't like is bordering on dick move. Chalk it up to a learning experience, buy singles in the future to help develop your tastes.
