Hefe's and dunkel hefe's. Every time I have one I'm like "I should drink this style more often." but when I go beer shopping again I revert back to "nah, I'll wait" or "not in the mood"

Most of mine are lamentations about paucity of options, as opposed to regret that I don't drink them more often.

Actual hefeweizens, as opposed to pale wheat ales. (I drink these quite often, I'd just like to see more of them.)
Bocks, doppelbocks, and eisbocks (why the US still has laws prohibiting fractional freezing, and why breweries who do great doppelbocks drop them for more freaking IPAs...argh).
Marzens. I'd drink these year-round, not just for Halloween. Bring on more marzens!
Wee heavies. There's a handful of good ones out there, which are sublime.
Bieres de garde. All the sour and funk of a saison, with much less of the concern about excessive hopping.
Rauchbiers. I have no idea why these aren't more popular with brewers, as they have plenty of in-your-face flavor and room for experimentation.

Kolsch. When done well, as refreshing as any beer out there. But a well done one is hard to find these days

If Trappist Quads weren't $6 a pop, I'd drink them far more often.

Rauchbiers. Obviously they're love or hate, but the fact is there aren't a plethora of these around. Love them and need more choices.

Belgians, hands down, especially when there is something tasty on draft. Pales and Browns typically suck me right in, you know, like a tractor beam.

Bock (in its various forms) and Bavarian lager. Though a handful of American breweries make doppelbocks, the choices are otherwise kind of far an in between. Fortunately, I have some Penn Dark at the moment.

Baltic porters. Most underrated style in my opinion, and hardly anybody makes one.

Too many to list, really. I only drink on weekends and usually only a few bombers. There just aren't enough hours in the weekend for all of them.
