Substitute for Wyeast 1098

    I am going to brew a Cascadian Dark Ale next week. Local brew shop doesn't have Wyeast 1098 (what recipe calls for) in stock. What would be a good substitution? Thanks in advance!!

    I consider this to be an American beer style and therefore I would use a California (Chico) Ale yeast strain; my preference being Fermentis US-05.

    If for some reason you feel compelled to use a British Ale yeast strain, a substitute for 1098 could be WLP007.

    WLP007 is a good choice. It might add extra fruity esters compared with 1098, which will work well in the CDA style.

    Another great choice would be good old S-04, which is cleaner and closer in the average attenuation.

    As far as attenuation goes, I would expect about 75% attenuation with 1098, 78% with S-04, and 80% with WLP007. If it matters. US-05 would take it even higher to about 83%, which is much different from the intended 1098. Not bad. Just different.
