I really enjoy that green onion taste in IPA's. I get a little bit of it in Sierra Nevada's Tropical IPA. I've tasted it in one batch of Sip of sunshine this summer. Last winter I enjoyed a lot of it in a double dry hopped Melcher St. from Trillium. After googling hop flavors I wondered if this was summit I'm tasting. If so I'm looking for suggestions if IPA's that have this onion flavor or are hopped with summit if this is the hop I'm tasting.

Oskar Blues is the brewery you seek. I get that flavor in their DIPAs.

Some hops have an onion/garlic flavor like Columbus & Summit, sometimes it is because of conditioning too quick and there is a higher sulfer level. I keep a copper mug around just in case. Toppling Goliath has that problem at the contract brewery. Half Acre too.

I read that Oskar Blues Gubna used to be brewed with summit but now changes.

Green Flash Imperial IPA has loads of that onion vibe.

I'm guessing this is a different contractor than Brew Hub, which makes PseudoSue and Golden Nugget, neither of which use either variety?

Much of the onion and garlic comes from when the hops are harvested. Late harvest will result in higher levels of those. That is a sulfur compound, and an old trick in wine, and some breweries and homebrewers, is a little exposure to copper, which knocks sulfur out. So the copper mug is a good strategy. The rotten egg smell goes away with conditioning, I'm not sure about the onion/garlic aroma, but it could too.

The conditioning problem is different than the hop variety problem but taste similar

Jeff, is it Dimethyl Trisulphide (DMTS)?

    Cheers!

Check out this old thread https://www.beeradvocate.com/community/threads/onion-garlic-flavor-in-ipas-summit-hops.11776/

I pick it up as more like weed, not onion. Founders Devil Dancer is like that, if you can find it.

I get onion from some mosaic beers as well. I have never gotten it from columbus though.

Happy to say I am one of the few who gets dank kine bud, not garlic/vegetal, from summit and other alleged oniony hoops. OG Gubna was sooooo good for those who are like me.

Yeah, I personally get those flavor characteristics from Pinner, so seems like it could be an Oscar Blues trademark.

I specifically hate the oniony flavors. And the most oniony beer I've ever had was Founders Devil Dancer. That stuff was like an onion grown on the volcanic plains of hell watered by the river Styx. Try it out.

If you are still looking, I recommend renegade's endpoint 'triple' IPA. 11% abv. Brewed with 100% summit hops. I'm loving it. I'm not getting any onion whatsoever, just a great imperial IPA. The 'onion' has to be a taste perception that not everyone has, because I'm not getting it...

I feel like i've often tasted it in beers with mosaic and/or simcoe with a bit of age on them...the fruity flavors morph into more oniony ones - definitely happened for me with last year's born yesterday
