    One of these days I'll get up to Milwaukee......haven't been there since all the breweries popped up. Supermoon seems real legit but haven't tried anything yet.

    Bottles of Many Phase (Batch 004) for sale now on the website. IMHO, one of the best beers they do and all three blends prior to this were delicious AF.

    Way back in November of 2020, we released our first two beers to you all. Many Phases Blend 001 was one of those beers- released as a sort of statement about what our offering to the beer scene will be. Old world, farmhouse style beer. Fermented entirely in Oak barrels. With funky yeast. Blended after long slow fermentation and maturation upwards of two years.

    Well, here we are, in 2023, with the release of our 4th blend of this “flagship style” blended beer. This one is a blend of beers ranging from 12-18 months from several French Oak wine barrels. The blend is perhaps the “lightest and brightest” of the collection. Not sour, but a bright, playful acidity elevates some really fun fermentation derived tropical fruit flavors that are grounded by silky oak tannins. As with most of our oak stock, there is a pleasant, welcoming and intriguing earthy funk profile to this that will excite rustic saison fans and natural wine enthusiasts alike.

    Profile Notes:
    Caramel drizzled peaches.
    Bright lemon rind.
    Pine sap.
    Grapefruit like acidity.

    Bottles of Sensitive King for sale now on the website and currently on draft. If you dig Tripels, this is one not to miss for sure. Definitely in my top three of beers from them I enjoy as well as overall commercial tripels.

    As many of our customers have come to know, bringing Supermoon to life was not a straight line, and it was a far cry from the business plan we wrote before a global pandemic. Things changed. In November of 2020, we sold our first beers, handing our customers bottles under a plexiglass shield at our front door. It stayed that way for a while. The "Bottle Release" model was a piece of our original plan, but never intended to be the sole business model. But it stayed that way for a bit. As things loosened, we picked up our taproom buildout - and as a way to stay alive as the pandemic slowed and our taproom was constructed, we began filling kegs for onsite consumption in our front yard "beer garden".

    Sensitive King was one of the first "draft only" beers we brewed. The response to batch one was shocking. So we scaled the recipe up a bit and did another. It was one of the fastest selling beers we brewed – and the question kept coming – "when are you going to bottle this?" Welp, here we are.

    Sensitive King is our Abbey Style Tripel. Fermented hot with a heritage Belgian yeast strain from a Trappist Abbey. Real hot. And then lagered, real cold. The resulting 9% beer is bursting with fermentation driven character, and is somehow smooth enough to maintain focus on flavor versus alcohol. It's then conditioned and naturally carbonated with champagne yeast for a velvety creamy bubble– paired with the beer that pours crystal clear, it's a result we're real proud of.

    Tripels and classic Belgian beers are the ones that first sparked my interest in beer and brewing. The explosive, mind opening flavors and aromas of beers like Orval, Chimay, Saison DuPont, Cantillon and the Westmalle portfolio called us to travel Belgium twice and then open our own brewery in the hopes of brewing beers worthy of their imitation for our customers to enjoy as well.

    It's sold out now but they are starting a Society and I am beyond stoked for it. Price is super reasonable for what you get (IMHO) and promise that the Society beer will not be available to the public. Anyone else on here jump in on this? It went out via e-mail on Monday morning and was sold out by early Tuesday afternoon.
