Surly Pentagram to be bottled (again, sort of)?

Just 6-7 months in, this beer has already changed a great deal in the bottle.

Excited for Pentagram, not sure if it is the same recipe or not but I never tried it the first time.

 

should I open a five now? or save my bottles for later, like 2 years?

 

That's up to you. I feel the souring is more intense, even after a few months. I had four bottles, had one right away and one a couple of weeks ago. My celler is there for when I feel like a beer, not for the sake of aging a beer, so who knows how long they will last

 

Especially with Crucified Squab.

 

I've got the date set for my next bottle of Five. 5/5, my 25th birthday!

 

@elshaggy - Nice, 5/5 is my 35th birthday... Sounds like a good reason to plan a tasting!

 

That's crazy jawzman, we smash piñatas filled with all sort of savory and unsavory edibles. must guess the foodstuff while blindfolded. And this year with some of my friends starting mini cellars were going to do some tasting. Especially sours! Five will have to be the fifth one we drink too, for epic-ocity.

Are there too many sour beers out there? I find the selection to be very limited, and hard to find.

 

So...I may be an "ass to mouth type of guy".
