Sweet Malts??

    So im looking for a malt that is pretty sweet but wont make the beer too dark. Looking at some sort of malt that would be sweet like: honey malt. Anyone use biscuit, victory or have any suggestions? Im thinking using up to 10% but will have an impact on flavor/sweetness

    Crystal/Caramel Malts would seem to be what you're looking for. They are available in a wide range of colors, and they all taste somewhat different. But most are sweet. But what are you brewing?

    Still up in the air but something like 10lbs of pilsner and 1lb of something sweet with a touch of color

    It would probably be easier for you, and you'd get better advice, if you chose a style first.

    Yeah what Vikeman said. Plus, if your base malts are Pilsner, then I am guessing you mean you want it to be RELATIVELY sweet. You aren't going to get Southern Tier Creme Brulee with that grist. You can increase the perceived sweetness by doing as Vikeman said and useing some of the more colorful cara malts. I use honey MALT (not honey from bees) in my saison for that reason. But I used in the neighborhood of 3% not the 9% you suggested. You can also mash at higher temps for more body and less fermentable wort which would attenuate less and leave a sweeter finished product. Instead of Pils, you could try Golden Promise. But we have no idea what you are going after here other than sweet.
