Switching Bottles Post Bottling?

    Anybody have a trick for possibly switching a beer from one bottle into a different bottle post bottling? I brewed up an awesome Saison that I am entering into a comp and I have it in 750ml bottles. The comp requires 3 bottles whether they be 12oz or more. My thought was to transfer the beer from the 750 into two 12s. According to Brewing Better Beer you can do this from a keg using a 2L bottle to ensure that the beer is perfect before transferring from there into your bottles. If I remember correctly you chill the beer to almost freezing as well as the bottles, flush w/ CO2, then slowly pour into the new bottle then cap on foam. So my thought is to chill the (sanitized) bottles and beer in the freezer, pop the top on the 750, flush the 2 12oz bottles w/ CO2, then slowly and steadily pour the beer into the bottles and cap them. Any thoughts?

    I rebrewed the beer for the comp and will bottle next weekend, but I just saw that the deadline for the entries is 2 weeks after I will bottle it. It will be carbed up by then (controlled temp), and have 2 weeks in the fridge (at the comp spot) before the comp. It could work, but might not be perfect by judging, so I am looking at the bottle swap as a back up.

    siphon very carefully? Keep everything as cold as you can.

    I recently did the same thing. I had them in swing tops and the comp said no swing tops. I asked and got the following advice;
    #1Don't do it.
    #2 If you do do it, then keep both the beer and the bottle to be filled, as cold as possible and transfer gently to minimize foaming and oxidation.

    I did #2. It sucked.
