I've not had much experience with saisons (I'm on a Belgian kick and want to try all the styles), but when I had a bottle of Tap 7 today, it didn't seem right. Having tried Ommegang's Hennepin, which I loved, the two were so drastically different that I can't help but wonder if I got a bad batch. My bottle of Tank 7 was quite sour, astringent (gave me cotton mouth after a while) and aside from heavy grapefruit bitterness, it was very hard to discern any other flavors. So, is this appropriate for this particular style, or did I get a bad bottle?
I had tank 7 for the first time a while back and there was zero sour to it. Mine was on the sweet side but it was fantastic. Seriously blew me away. I also didn't notice any unusual bitterness either. How old was your bottle?
According to the date, it is fine until next May. The only flavors I could detect were bitter grapefruit and an almost vinous sourness. It was very astringent and the spice/funk/phenols were buried deep under the grapefruit taste.
Maybe yours was bad??? I remember mine being a sweet orange/citrus flavor. I also don't remember any bitterness, sour or alcohol taste to it. I swear I remember it being so good that I murdered it in a couple of minutes.....
