Target pitch rate for a kolsch

    I don't actually count cells, but I have never brewed a kolsch before and would like some feedback on starter size. Do you use a lager-sized starter, ale-sized or something else? TIA

    I use halfway between a lager and an ale size starter. Works great.

    I use a target halfway in between the two.

    Edit: Actually, not quite halfway. I use 1,000,000 Cells/ml/Degree P, which is a little closer to my ale rate than it is to my lager rate.

    I agree with what's above. I like to overpitch a little and I like to run the temp way down with the Wyeast 2565 strain. Do a D rest at the end of the fermentation. You'll probably be doing a step starter.
