Tart of Darkness

    Picked up a few bottles of the oh so tart, Tart of Darkness. I am enjoying the first now and I really like the tartness here, but I am newer to aging sours and I am curious to what will happen to this with age. What do you guys think?

    While I am sure this could age for two or so years, I don't think it's going to morph into something even remotely different. It's tart as hell now, I think in a year or two it will be like battery acid on the tounge. I am in the do not age camp for this one.

    I have two of these in my cellar, but I don't plan on keeping them around longer than 6 months or so.

    On the back of the bottle it states that it can be cellared properly up to 3 years, just an FYI.

    I still have a few bottles from the last batch, they have lost most of the maltyness and now are just tart

    Had one from last year the other day. Tart, yes. However still had a maltiness to it that I found present & pleasant.
