Temperatures Help for IIPA?

    I'm sure there are dozens of similar replies so far, but here's my two cents:

    Get your wort BELOW 70F for most ale yeasts*, 65 is great, as is 65 for fermentation temperature. That ain't even a concern, it's more like perfect.

    Airlock activity is a poor indicator of fermentation activity. Not only do I not actually have ANY fermenting buckets that actually show the bubbling, I never even check anyway. You will get over the obsessions of noob brewers and learn patience as you get more batches under your belt.

    And yes, put the top on the airlock.

    *tho do be familiar with your particular yeast and its preferences.
