Ten Fiddy

    I have two of these bad boys with 3 years on them. Should I wait another year or two before cracking them open? Or is this enough time. I've never had a beer that ages well with 5 years on them. I'm thinking this would be one of them.

    If it's 2012 Ten Fidy, go ahead and drink one and get ready for a treat - it is drinking great right now

    Personally, I would drink one soon. It's going to be amazing, and then you'll know if you should drink the other one now or try to go a little longer. It's a good problem to have!

    Have a fresh one around to do a side by side so you have some frame of reference.

    I recently drank a 2012 and it was tasty... I'd drink it sooner than later, didn't think it was getting any better.

    Very true. I had some 10/2012 Fidys saved. Drank one with blind with a 1/2014 a couple nights ago. I Preferred the 2014 over the 2012, the '12 just seemed bland. Had I not had the '14 as well I probably would've enjoyed '12 more. No more cellaring Fidy for me.

    To each his own! I did a '12, '13, '14 verticel a few months ago and '12 was the winner, closely followed by '14.

    Had an '08 in '14 and really enjoyed it.
    But never had a TenFidy I didn't enjoy!

    I've found that I like Ten Fidy most between 6 and 24 months, roughly. I opened a 12/2010 can last year during the Super Bowl and it was definitely past its prime at just over 3 years of age, so I would say to get on those 2012s sooner rather than later. They're probably just about peaked if they haven't already, as others are echoing.

    I think I had the 2011 fresh, after 1 year, and after 2 years. I'm not sure this beer ever declines. It must be the superior storage that a can provides.

    I just picked up a 4 pack of Ten FIDY after reading this and other cellaring threads. I have it sitting next to Bell's Expedition stout and Sierra Nevada's Narwhal. Let's see how long I can make it without cracking any of them open.

    Remember when people were going around saying conditioning beers in cans for extended periods would leech shit from the can to the beer?

    I may have to get some TenFidy pretty soon, though.

    Cool thing about the 10-50y's is that you get a 4 pack for around $15, and can have one now, 6 months, 1 year and 2-3 years later. Great fun and value for $15. :-)

    I just talked to my company's chemist, his verdict is that cellaring beer really only helps to mellow out the alcohol you might notice in a fresh beer and maybe make the malt flavors more present. I guess I did notice this with a KBS that was a year or two old - the beer seemed to be less "dynamic" and I definitely didn't notice much bourbon present, if any at all.

    I have a couple from 2006 that I need to try. Food poisoning could be a serious possibility.
