This past April John and Jen Kimmich, thehusband and wife duo behind the wildly successful brewery The Alchemist, in Waterbury, Vermont, got excellent news: Something was wrong with their canning line. The Kimmiches make a double India pale ale called Heady Topper—considered one of the best beers in the world. It sells out in less than a day and is so popular that the brewery had to stop tours and retail sales to appease the neighbors. But John still wasn't happy with it. He wanted to find out how the scant amount of dissolved oxygen, which can break down the hops and slowly erode Heady's complex flavor, was getting into the beer. He finally had his answer: the canning process.

Intersting article, guess they are always tweaking with the entire process to make things better.

What's interesting is that last spring there was some debate on here that some BAs thought Heady wasn't tasting quite as Heady as it had previously. Jen even popped up to say nothing had changed in terms of the yeast/hops/etc... Then we see this article that John was wondering how dissolved O which breaks down hop flavor had been getting into the beer... Regardless, it's great to see their commitment to the best possible product. Love those guys.

Are they not pouring it as much at the local VT bars lately? I havent seen it on any of the lists as of late being poured.

I saw a tweet about three weeks ago that the Alchemist was suspending keg sales...was then at The Pro Pig two weeks ago, and the bartender confirmed that they were no longer getting kegs...when I asked why, he smirked and said he didn't know. Could be that there were only a few keg accounts to begin with and it wasn't worth the effort, could be a quality thing, could be a quality control thing, who knows...definitely no Heady on draft though...
