Many of you out there have extensive beer cellars, but you had to start somewhere.

What was the first beer you've aged?

    Me?

DFH 120. Purchased outside of Ocean City, NJ and aged it almost a year. When I cracked it, it was ok...not nearly as good as what I was expecting (not DFH 60, 75, or 90 for sure). Glad I tried it. But, my beer aging now is limited to a handful of 4 packs and a couple of bombers here and there.

    Abyss 2014.

I had it "fresh" and really enjoyed it. Cellared a few bottles and tried one about a month ago. I think I actually liked it better before the 1 yr mark.

Uhhh ... various homebrews, by accident. You just kind of shove them to the back and forget about them. I made a Belgian quad that was great after the one year mark.

I don't know what nefarious activity you're implying by "aged" beer....

Just kidding. It sort of just happened after I heard it was possible to age beer. I just remember having a closet with 5-8 beers all of the sudden. I believe it started after I learned most sours improved with a few years on them.

I think it might of been Bigfoot 2012 when it came out. Still have a couple.

Stone Vertical Epic 02/02/02. I still have one, along with '03, '04 and '05. Thinking about finally drinking it alongside the fresh Encore 02/02/02 Stone is releasing this year. That should be interesting.

i have quite a few in my cellar now.

my first in the cellar was Stone Brett IPA Enjoy After 7/4/16
haven't had any out of my cellar yet, i have some good beers in there too. RIS, old ale, barleywine, double porter, etc. looking forward to my aged bottles of 120 Minute.

i actually enjoyed 120 minute. it wasn't near as bitter or strong as i expected. i liked the taste, feel, and aroma of it. wouldn't mind the mellowing of it.

Bell's Cherry Stout. I found it a bit too tart when I first grabbed it, and an experienced friend suggested aging. Much better after a year. I still have one with just over two years on it, waiting for a get together with some friends to crack it.

Pretty new to aging beers but right now I have some Russian River sours, Alesmith Reforged and a belching beaver Old Dirty barrel. I always want to buy a couple so I can try one and hope I make that mental bookmark so when I open I can make that comparison in my my mind.

I started stashing Firestone "box beers" in 2012... Now I've probably got 25+ in the wine fridge.

2012-16 verticals of Sucuba, Anniversary Ale, plenty of Parabola, Stickee Monkey, Etc...

Outside of that just have a few Stone "enjoy after" and a couple of their limited releases

I have a 2014 5050 Eclipse stout in my fridge. I'll drink it on my birthday in July. Also have a couple 2012 Courage stouts that I don't have a plan for.

The first beer I ever aged is a Founder's Backwoods Bastard. I still have it. It somehow accidentally went unnoticed in my stash for about 2 years before I noticed it and decided to age it for even longer. It's now been about 10-11 years.
