Interesting quick read on some of the actual chemistry behind aging beer and flavor changes. I know I'm always wondering exactly what happens in my cellar so I found it to be pretty informative even though I'm no chemistry wiz, although I didn't click through to read the full study. The chart of flavor progression over time is a bit vague but at least lets you know how many different characteristics are at play.
