Here in northern Wisconsin, regrettably, most bars don't have more than eight taps. My brother, father, and I have been considering getting into the tavern/pub business for some time, and it's a thought I frequently return to: what eight beers would I choose--presuming these would be eight "staple" beers--to have on tap? This, of course, requires thinking not only of eight beers that I believe to be exceptional, but also what eight exception beers do I believe the most people will want to order, as well as how much certain exceptional beers are going to cost (and what's actually available here). For this little fantasy, we're going to assume that I won't have any huge macros on tap (why any place around here does bottles and taps for Bud Light, Budweiser, Coors Light, and Miller Lite is beyond me), and I'm going to choose beers that are available year-round. Here's my current dream lineup:

    1) Victory Prima Pils
    2) New Glarus Spotted Cow (I know it's not exception, but folks here--especially tourists--love it.)
    3) Toppling Goliath PseudoSue
    4) Surly Furious
    5) Black Husky Big Buck Brown Ale
    6) Great Lakes Edmund Fitzgerald
    7) Bell's Kalamazoo Stout
    8) Founders Rubaeus (This one passes the wife-who-rarely-drinks-beer test.)

This pretty much covers my bases, in terms of the most popular regional styles. What would you--given the parameters I've mentioned--choose as your eight?

Not being from your area I have no Idea of availability, but I'd agree with your top 4, I think I'd put Great Lakes and Founders as the seasonal options/limited releases, Bell's with Two Hearted considering it's reputation, and then do some other big name stout like Ten-fidy or Yeti.

From a sales standpoint, I'm not sure if these are the best choices. From a personal view, these are my top 8:

    Firestone Walker Pivo Pils
    Weihenstephaner Hefe Weissbier
    Sierra Nevada Pale Ale
    Unibroue La Fin Du Monde
    Alpine Beer Co. Nelson
    Rodenbach Grand Cru
    Rochefort 10
    AleSmith BBA Speedway Stout

If you can't pick something from that list, I'm sorry, you're just not in the mood for a beer.

:astonished: I can understand why an individual bar owner might want to sell "craft" beer exclusively and realize it is entirely possible to succeed in many markets with such plan, but you really don't understand why any bar sells the 4 best-selling beers in the country, which together - out of thousands of available brands - account for 40% of the entire US beer market?

Good list but if I was the customer I would want revolving taps. If the same 8 beers are on for months with no new options I would get bored with it and probably wouldn't return but if I had to make an 8 tap list it would be:
    1.SNPA
    2.DFH Indian Brown
    3.DFH 90 minute
    4.two Hearted
    5.ten Fidy
    6.Founders breakfast stout
    7.SN Nooner
    8.Founders Porter

    For Houston Texas...

    1) Saint Arnold 5'OClock Pils
    2) Live Oak Hefe
    3) Lone Pint Yellow Rose
    4) (512) Pecan Porter
    5) Karbach Sympathy for the Lager
    6) Brash Cortado
    7) Hops and Grain A Pale Mosaic
    8) Southern Star Buried Hatchet Stout

All Houston and Austin area breweries, and there could be much more (I did not include anything from Real Ale). I would be perfectly happy with that tap list all year round though.

Shouldn't you have included "the top five beers from the top five states if you could only drink one beer in a can for the rest of your life on a desert island after mowing the lawn for your wedding"?

I'm with you. I like new and variety. This is tenfold if I am going out and purchasing a beer at a bar. I rarely buy a pour of something I can just get anywhere and easily. If a place has 8 stale taps, then I'm not coming back.

The local craft place here changes their taplist at 11 everyday, and I look everyday to see what's new.
