Jacks Abby House Lager is a great beer... Some people can appreciate lagers, they aren't entry-level beers.

I'll assume my distributor takes care of me and no more than 1 per brewery, tyr my best to mix styles...

    1) Victory Prima Pils
    2) Founders Porter (Breakfest stout in autuem though)
    3) 3 Floyds Zombie Dust
    4) Platform Speed Merchant (Or Brew Kettle White Rajah)
    5) Bells Expedition (We get a keg of Blacknote too)
    6) St. Bernardus Abt 12
    5) Fat Heads Seasonal/Rotating l (Trailhead, Hopstalker, Spooky Tooth, Holly Jolly)
    6) Stone Seasonal/Rotating (IPA, Enjoy By, IRS, Xocoveza)

5 and 6 could really go with (ALMOST) any of their brews but those 4 being my top choices
Also. the rule was 8, but the last two 'Seasonal/Rotating's would be rotated occasionally with Jackie O's, Alesmith, Ballast Point and Sierra Nevada at any given point.

I too have been thinking abut getting into the tavern business. I always felt a rotating list is best. Really no house beers just things I believe would be appreciated. Keep it exciting.

If i could have any beer year round...

    Sierra Nevada Pale Ale
    Spellbound Porter
    Sixpoint Jammer
Shock Top. (yes, im serious) maybe Hoegaarden
    Sly Fox Helles
    Weihenstephaner Hefe
    Brooklyn Lager
    Green Flash Soul Style.

A bit of everything. Nothing too strong or too bitter all flavorfu enough and can go well with food or not.

The ultimate 8 taps already exist. Any given 8 as a subset of those available at City Beer, Caps & Taps, Good Karma, Trappist, or Trappist provisions (Bay Area) at any given time is a better selection than anything I could come up with.

oh man, this is tougher than I thought. I'm not super experienced with beers as many people on here, but here we go:
    1) Heady Topper
    2) Miller Lite (palette cleanser)
    3) Arrogant Bastard
    4) Old Rasputin
    5) Sierra Nevada Pale Ale
    6) a rye IPA, something like Rye One On
    7) Sam Smith Oatmeal Stout
    8) Nugget Nectar

Although never achievable, this is what I'd end up with. Kind of a homer with a ton of Ohio brews, but I'm biased. Fun idea though.

    1. Triple Digit Chickow! (Brown ale)
    2. Lagunitas A little Sumpin' Extra! (Hop Heads)
    3. Four Strings Vanilla Porter (Porter)
    4. Yellow Springs Zoetic (Pale Ale)
    5. Rotating Hoof Hearted tap (Why the Hell not)
    6. Great Divide Oatmeal Yeti (Stout)
    7. Blank Slate Opera Cream Stout (Super underrated Cincinnati beer)
    8. Hoppin' Frog BA Naked Evil BBW (Barleywine, because DUH!)

This sounds like a fun list...I'll play along. However my bar would focus on ~easily sourced, Belgian-inspired beers:
    1) Duvel Single (Duvel Moortgat) 6.8% ABV
    2) Black (Allagash) 7.5% ABV
    3) Exit 4 (Flying Fish) 9.5% ABV
    4) Hennepin (Ommegang) 7.2% ABV
    5) Blanche De Chambly (Unibroue) 5.0% ABV
    6) Grand Cru (Rodenbach) 6.0% ABV
->6ALT) Cuvee Rene (Lindemans) 5.5% ABV
    7) Premiere/Red (Chimay) 7.0% ABV
    8) Raging Bitch (Flying Dog) 8.3% ABV

IMO, a well-rounded, full-flavored profile with patrons being able to commandeer themselves home safely.
