Theobroma and Bolognese?

    My girl friend is cooking us dinner for the first time Saturday and like myself she is a huge beer fan, espcially big stouts and the like. She is making pasta bolognese and I was wondering if the Dogfish Head Theobroma would work well with it. It's big bold flaovr I think would hold up well to bolognes but I just want to see if I am correct about it. Thanks in advance.

    I'm not fan of it with any fatty meats. I like it with leaner meats...turkey or deer. Check the DFH pub menu and see what they pair their brews with and try to get close to that.
