Part of me feels bad for these brewers. Part of me wants to say to them, "this barrel aging, I am not so sure it means what you think it means".
Well Mr. Whoever must have a good sized cooler to accommodate a 50+ gallon wood barrel but I suppose where there is a will there is a way. Salud!

Bill, When I first started reading the article my initial thought was temperature (i.e., a continuous, steady temperature for barrel aging) but as I got further into the article: “Previous experiments had involved shallower depths, so they wanted to test beers made under greater pressure.” Do you have any ideas here as regards the influences that greater hydrostatic pressure would have on aging beer in wood barrels? Yeah. My idea. If you want to ferment under pressure apply argon or nitrogen at the desired pressure and voila. Not exactly sure how the outside pressure on the barrel has much effect on the inside pressure on the liquid. It's not like the inside of a submarine is a high pressure environment. That's the point of a submarine right? This is just some stupid shit.

Me neither, I figured I would ask. Well, a submarine is made out of thick metal and is pressurized commensurate with permitting the sailors to live. A wooden barrel may 'behave' differently from a submarine. Cheers!
