    Interesting. I didn't find the habanero to be intense at all. I only noticed the heat a little bit near the bottom of the glass after it warmed up a little.


    But I think my most common "This beer would be perfect if only..." would be if this beer had more hops!

    Surly Wet would be perfect if they'd go back to the 2012 recipe instead of changing it every year. Oh, and they'd have to continue brewing it too.

    On tap, yes...that would be heaven!!!! Bottled? Well only if they clearly mark the brewed on date (maybe they do already) as every year there are several cases on the floor of bottle shops I see getting old and stale.

    Some Firestone Walker BA beers are delicious but the barrel comes through a little much. Happened with Hydra Cuvee (with Flying Dog)

    Every six-pack I've bought has the bottled-on date clearly marked on each bottle.

    I thought the heat in mexi cake was perfect. I find virtually zero heat in huna and the other Mexican style stouts (though I have a high heat tolerance). But I did find a bit to much cinnamon in it for my liking.

    Alaskan Jalepeno Imperial IPA would have been perfect if it had had a heavier, sweeter malt presence. It's a great beer with food, but with some graham-crackery malt weight, it would have stood out on its own like a fine gem.

    DFH Fort would be much better if the abv wasnt so high! Same thing with sahtea.

    The list would be long so I'll summarize with "American Saisons". There are so many that would be great if they were just lighter bodied, so many have such great flavor they just fall off due to the mouthfeel.

    NEBCO Gandhi Bot: mouthfeel. If it were a bit creamier, I really think it could compete with HT and HF DIPAs. Flavor and aroma are right up there.

    Stouts (lots of them): need to be thicker.

    NG Serendipity: just tried this for the first time today, and thought that a prominently funky wild yeast presence would really put this over the top, and would help to balance out the extreme sweetness. Still delicious.

    Hoptimum if the abv was lower. Sculpin if it was cheaper and Sucks if it was year round.

    HF society & solitude 5 would be perfect if it would appear in front of my face on demand in Texas. Had one growler of it via trade, and I crave it a couple times a week.

    To the OP, I think Mexican Cake was outstanding, and damn near perfection. A local brewery down here (Lakewood) made a very similar one time release in May. It was Lakewood Mole Temptress...and was phenomenal. chili was definitely present, but the cinnamon was more. VERY much like MC, and perhaps you'd have enjoyed it more...

    To give a more opinionated answer that's not "I wish it was year round!" I'll refer to a beer that's common, in my top 5 favorites, and is commonly consumed by me: DFH 90 Minute

    To me, it's one of the greatest brews out there. There's a reason it has the praise it does. I never hesitate to buy it (given it's fresh) and I'm never disappointed when I do buy it. However, being quite the fan of bitterness and raw hop flavor, I feel like this beer could be perfect if the malt was dialed back just a bit to allow the flavors to be off-balance in favor of the hops. It feels weird saying it, but I feel like this beer could be near-perfect if it weren't so damn perfectly balanced, lol.

    ... or if they still brewed it. It will hopefully be like Raison d'Extra, where they let it go for a few years and then bring it back.
