Thoughts on Spruce

    I made my first spruce ale 3 years ago. I basically added an oz per gallon of fresh tips to a 5 gal regular ale recipe. At first it tasted rough but now it has a unique lime taste that's very different from regular beer. And it seems to get better every year. I'm wondering what other peoples experience was or is from making a spruce ale.

    Brewed a spruce'n juniper pale ale.
    In May...a year ago.

    Tips came from new growth Norway spruce..about two months old....a little past the bright green stage.
    Late addition + some more at 0".

    Rough tasting when young (< 12wks in bottle).

    Turned out to be a 'special occasion' brew where you'd happily have a pint and call it day.
