Throw together a random recipe

    Anyone want to throw a recipe together? I'll brew it up and send you a six pack once it's finished for your input! Doing all grain 5 gallon batches. On Hand:

    #60 American Two Row 4oz 7Cs - 9.9aa
    #12 British Maris Otter 8oz Falconer's Flight - 11.4aa
    #16 White Wheat Malt .5oz UK Fuggle - 5.0aa
    #3 Munich 10L .5 UK Kent Golding - 5.8aa
    #3 Flaked Wheat .5 German Hallertau - 3.8aa
    #4 Flaked Oats .5 Czech Saaz - 3.2aa
    #.5 Caramel 120L
    #6 Rice Hulls
    #.5 Carapils Yeast:
    #3 Blackprinz White Labs Belgian Ale WLP550 1000ml starter and have it
    #1 Roasted Barley ramping up again today on the stir plate with fresh wort
    #.5 Black Patent
    #1 Chocolate Malt 350L
    #2 Chocolate Rye
    #2 Debittered Black
    #2 Coffee Wheat
    #1 Belgian Caravienne/Cara 8L

    Was hoping to do a belgian pale/IPA or wheat but listed all my dark malts anyway to see if anyone could throw out something interesting. With the 7Cs and Falconers flight I'm leaning more towards pale/IPA or wheat. Whatcha Got??

    8oz Falconer's Flight - 11.4aa
    .5oz UK Fuggle - 5.0aa
    .5 UK Kent Golding - 5.8aa

    .5 Czech Saaz - 3.2aa

    Yeast:
    White Labs Belgian Ale WLP550 1000ml starter and have it ramping up again today on the stir plate with fresh wort

    I actually happen to have #2 Honey Malt that I forgot to list!! You wouldn't use the entire lb of Caravienna??

    Given the rest of the recipe, I suspect HB42 was recommending actual honey, rather than honey malt.

    Ah, I read through to quickly and failed to see that there was not "malt" written after the word honey. Intriguing...would you throw it in the boil? And at what time? I've only used honey in a beer once so I'm not to experienced in that realm - boiled 8oz at 20min mark for an American IPA.

    I would add it at flameout or at high krausen. Adding to the boil will boil away a lot of volatile flavor/aroma compounds.

    A nice, happy median might be to whirlpool down to ~175 (like adding hops late)...pull some wort @ KO and the room temp honey should dissolve well and be about the same temp as the remaining wort (~175*F)

    I've used that method with honey many times and seems to work pretty good.

    Personally I would use 1/2 lb of caravienna in this beer, but a full lb would certainly be fine if that's what you want to do. And yes I did mean actual honey, not honey malt. The less you heat the honey the more of its flavor and aroma you preserve, I find that adding it at flame out or during cooling is a good compromise between preserving aroma but still allowing the honey to dissolve easily.

    May want to use something else to bitter in place of the Falconers flight... Just did a pair of beers (IPA and APA) with Falconers as the bittering and flavor/aroma sdditions and the bitterness was very harsh and lingering. If I repeated the recipes I would've replaced the bittering hops with something smoother (warrior, nugget, magnum, etc). EKG or fuggles might be a better alternative, in spite of their low alpha acid content (eg. More material in the kettle).

    So I went ahead with HB42's idea but I did end up using 1lb honey malt rather than 1lb of raw honey. I figured it would give it some nice residual sweetness. Also, I boiled for 60min rather than 75. Hit my mash temp and gravity right on (1.062) and pitched my yeast starter with no hitch. Checked it this morning and she's already fermenting away and it smells incredible. I dubbed this beer "Chubby Chaser Belgian IPA" - not sure why but it sounded funny to me. I appreciate the help everyone, depending on how this recipe turns out I'll probably do it again with different tweaks from all the other input.
