Tin Bucket changing hands?

    Actually, if I'm drilling a bunch of wings, actually Hot, I want the hoppiest of all the IPAs available.

    You can only match strength with strength.

    I dunno man, tbh this change makes me more likely to drive to that neighborhood. But then I am hot sauce fiend and have been o the Portland Hot Sauce Expo the last two years in a row. I'm hoping they bring in some of the sauces I've seen on the YouTube show Hot Ones (if you haven't watched it, do so).

    Stopped by today. All closed up, with just a sign on the door about the new place taking over. No mention of an opening date. Looks like they're going to completely refurbish the place.

    Time is a loop.

    Around 2007 I lived in Indianapolis and a pretty similar concept opened up. Craft beer on tap, a good bottle selection, and a wall of hot sauces. They served food as well and you could use any of the hot sauces on your food, or buy hot sauces to go. Owned by a really great guy and staffed with a great head bartender, I thought this was a great idea for a restaurant. It was not.

    These are not really compatible markets. But this is Portland so who knows. The NSB article says he thinks hot sauce is going to sell better than packaged beer. There's a reason you only see hot sauce kiosks and tiny closet stores in other cities. Hot sauce is a novelty market at best. How often does anyone go to a hot sauce store, especially one not in a tourist district? I don't know who approved this business model but it isn't going to last.

    And I love hot sauce.

    My take as well. If they have a decent tap selection, comparable to what Tin Bucket had, then I'll continue to stop in from time to time. I'll also likely buy some hot sauce from time to time (cuz I love hot sauce as well).

    But that wouldn't be the draw. If the tap selection isn't any good, I won't be stopping by. It's hard for me to imagine that anyone is going to stop by, just to see what sort of hot sauces are available there.

    I honesty don't understand why the new owner feels this concept is going to be a good fit for the area. Meh, but what I do I know. Maybe he's a genius and is on the cutting edge of the next new big thing.

    yeah this does seem like a bizarre business model. Ive never thought to myself "damn, if only i could take care of my craft hot sauce and beer needs in one convenient location! " . and i love hot sauce and beer (separately).

    But I agree with John_M . If the tap selection remains top notch, ill still end up there once in while.

    This seems to be the common take but I'm the opposite - I prefer something mild like a dunkel or even a brown ale or something with spicy foods. Let the food shine instead of compete with it with intensity, which tends to just kill my palate.

    I've always described beer and food pairings as the malt being the primary food (meat, vegetable, cheese, whatever) and hops being your spices. While you absolutely want spices to be compatible and work with each other, trying to pair spices with really strong spices (hot sauce) is like an arms race and it's just going to be overwhelming. As with anything, people like whatever they want. If you're wrecking your palate with crazy spicy sauce then why not wreck it further with a DIPA? You sure won't taste fuggles with Dave's Insanity Sauce. But if you're doing a legitimate pairing you probably want a lighter, sweeter beer to compliment a tangy, spicy sauce, like the dunkel or brown you suggested.

    One of the new co-owners also owns a fledgling hot sauce company, so that explains the connection with hot sauce. He's also a super knowledgeable beer fan (hosts a beer podcast called Game of Beers) and has some connections in the industry so I wouldn't expect a major dropoff in the quality of beer on tap.

    I somehow didn't see this thread, but I suppose I can chime in as one of the owners/GM/buyer.

    I was the beer buyer at Tin Bucket for the first three years, and Les Caves beer and Kitchen, and Corvallis Brewing Supply before that.

    If you liked those selections you should like our list now for those worried about beer selection. We have a dedicated Sticky Hands tap, and most likely will always have two B15's on tap. We are also going to have a dedicated Ale Apothecary tap.

    We plan on bringing in a crowler machine to make up for the drop in cans/bottles to go, but we still have a good amount of to go goodies. We are supporting craft hot sauce and craft beer, reaching out to sauce producers that are not available anywhere in PDX as well as local sauces. We LOVE hot sauce. I can't apologize for that. We have free sauce flights available every day.

    Trevor/Linsey (de Garde) and I have known each other since before I sold him his first batch of homebrew ingredients. Don't worry about collabs, and F.A.I.L will be on draft early next week :slight_smile:. There will be collab beers and sauces with local breweries very soon.

    Short story long, I hope you don't worry about the beer selection, and come try some cool sauces :slight_smile:

    Stopped by the other day. Pretty similar to the old Tin Bucket, though a little light on the BA offerings. Pretty decent tap selection otherwise, and the bottle/can selection is comparable. Vibe is pretty similar I thought.

    Interesting selection of hot sauces, though I didn't personally care for the fact that none of the bottles were priced (was advised that most everything is between $7 and $12). Shrug.
