Hello guys I did what I advise other people not to do, took many reads of beer gravity because it didn´t ferment any lower than 1016 and my expected FG was 1010-1011. Now I got what I deserve, a new churming activity forming a pellicle that I know for sure is the type of wild yeast.It is not completely formed though so I put fermentor in my frdge at 40 F last night. Seems it wasn´t useful, pellicle is still growing but it is still not thick nor total surface wide . Do you think it could be useful to keg it leaving the last 2 inches of the top wort in the fermentor?. Is there any other cure for this than constrict my balls with a door?
Sounds infected...there isn't anything you can do at this point to "fix" the beer, so it's either drink it as it is or just pour it out and lose that batch. If you like sours, give it a taste and see if you like it. If you like it, I'd bottle it to keep it away from your other clean beers that you'll use in the keg in the future. If you don't like it, dump it out and chalk it up as a loss.
How's the beer taste? Is it worth infecting a keg, lines, or bottling equipment to package this beer. The answer is allowed to be yes. Just scrub everything with bleach water and rinse rinse rinse before your next beer touches that equipment. It sounds like you are blaming the sampling for your infection. Do not rule out the idea that the infection could have happened before this. Just keep sanitary on the cold side of brewing.
That is a matter I would like to hear your experiences. I `ve just racked this beer to another fermentor leaving 1/4 gal behind to drink it as it is, beer tastes pretty good right now, so I am wondering if this or any other beer shows signs of infection , shouldn`t it show traces of this fact in regards flavor?
If it's forming a pellicle, then you should be able to at least taste hints of the bacterial effects in the beer. If you don't really taste anything off, then you may not have a pellicle and it could just be foam from fermentation.
