    Yeah, they said a month or 2. They tested it and everyone came back clean.

    Either you haven't had WoodwerX or you don't have the experience/palate to recognize diacetyl.

    I can only taste pterodactyl. Very mild meat.

    Yeah, it sucks but Woodwerx clearly has diacetyl.

    Curious as to how you know...info from the brewer or just a trained taster?

    If he is who I think he is, he's an award winning home brewer and a trained taster.

    I definitely tasted some diacytl in a couple of beers at celler 3 as well. I went down for the opening weekend so hopefully it's something they can avoid moving forward.

    It's a flavor that I would pick up but didn't know what it was. Had a friend point it out to me and now it's clearly cheerios to my palate. I can see why people would mix it up with diacetyl though.

    What causes it? Can it age out? They said give it 2 months in the bottle.

    The pizza place in that same little strip is good too. I think it's two slices and a soda for $5-6.

    Interesting...I went to Toolbox right after an off-flavor training session that included diacetyl, but not Tetrahydropyridine. Would love to try those side by side to know the difference.

    But don't most sours have elevated levels of diacetyl anyway due to lacto and/or pedio? So possible Woodwerx had both off flavors?

    I’m glad “Cheerios” is a description, because I used to have pet rats and yet I don’t know what the hell “mousy” tastes like. I wasn’t in the habit of eating them.

    Depends on the quantity of it produced but Brett will clean it up with time to either very small perceivable notes or bellow the threshold of tasting.

    It's more of an issue of funky beers which is why I don't think you see it with clean beer off-flavor kits.

    Looking forward to getting a bottle of The Carlton.

    I have found the cause to be either too long in the barrel, barrel contamination, or just a phase the beer goes through. It can be cleaned with bottle/keg conditioning, but have found it will come back sometimes. These funk beers go through a bunch of weird phases sometimes, kind of why they call it Wild Yeast I guess. I found to just roll with it is the best option.
