Top cropped yeast and spent wort

    So, I am fermenting a Saison beer at this very moment, 2nd day fermentation is running like hell. It is a 24 qts batch with an OG of 1065, I have pitched 2 packs of Fermentis S-286 rehydrated dry yeast.The point is I have collected 2 qts of beer/wort plenty of top cropped yeast and I am wondering if I can cold crash this vessel to collect this new yeast then returning the spent wort into the fermentor to replenish the initial desired batch.I have never collected such a huge top cropped yeast/wort volume before.Do you have any experiences, advices?.

    My only experience is with 3944 blowing off. I sanitized everything and collect a fair amount of liquid/yeast in blow-off jar. It was cold crashed and yeast solids separated. The top-cropped yeast never re-started . . . it was like a cup of sand poured into the starter. I know top-cropping is a viable process, but my one attempt failed.

    Regarding adding the collected wort/beer back to the primary . . . that sounds risky from a sanitation point of view.

    I know, but if you think you would use this top cropped yeast to make a starter to ferment a new batch it would be unuseful to do not take the same risk.Am I wrong?
