Anyone know how trillium hold up when cellared?

None of their stouts have really been around long enough for somebody to say

What beers are you talking about specifically? PM Dawn and Night & Day both have coffee, so I wouldn't cellar those since the coffee will fade.

Pot and Kettle won't go bad per se, but it's not something that's going to improve with time.

You will probably get a better response if you post this in the Cellar and Aging forum.

When it comes to Trillium, I don't have the willpower to keep it more then a couple days let alone cellar.

I'm not cellaring it for long, I'm just waiting for people to drink it with. That bottle is huge for just me.

Just had a Night & Day that was bottled in February of 2015. It was quite good, but I got the sense that it has dropped off. My suggestion - closely monitor the reviews. Also, any coffee beers are going to drop off with time. I'd drink them fresh, but I'm not a Trillium expert by any means. Cheers.

These beers were brewed w/ the intention to be ready to drink early vs. intended for cellaring. Not a ton of huge roasted barley that would need time to mellow/improve with time. Coffee is fragile!

And the pot & kettle doesn't need anything that aging might do in terms of mellowing. It's an excellent beer and my favorite of theirs (yeah, hoppy beer lovers, I said it. Trillium's best beer is an oatmeal porter!).

I have double P&K and night & day in mine. I know it's not what the brewer intended, per above, but interested to see regardless.
