Foeder Aged Clever Girl - Sometimes, it ain’t all waiting on you… and with these mixed culture solera style foeders we’ve been shaping and guiding throughout the 5 years they’ve been in existence, we’ve learned that we regularly have no say in what happens, be it for better or worse.

On a routine foeder top up, we elected to send some fresh Clever Girl wort hopped with Citra and Mosaic back in to the oak with hopes of steering the resultant beer back toward our desired fermentation profile. Upon sampling after the mostly uneventful refermentation, we noticed something deeply tropical had taken residency within the wood, and were pleasantly surprised to say the least.

The interaction of various hop derived compounds in the presence of active wild yeast and bacteria had seemingly created something greater than the sum of its parts. We pulled our typical batch size of said beer into stainless and dry hopped it with the exact cocktail of hops that our beloved Clever Girl IPA receives and then laid the bottles to rest while they conditioned to an elevated level of carbonation over several weeks.
After careful handling and delicate pouring, we taste effervescent notes of tropical pineapple mango, floral crushed tangy grapefruit, fresh navel orange mimosa, with a vibrant lactic lemon zest drying finish. An undoubtedly interesting counterpart to Clever Girl’s softer floral mango dark berry citrus melon like character. 6% ABV

Clever Girl IPA - An incredibly light bodied, soft and dry American IPA with impressions of tropical citrus and dark berry floral aromas. Hopped generously with Citra and Mosaic hops. We will also be pairing a Clever Girl IPA release with this and both of these beauties are 6% ABV.
