I have been cellaring a few bombers since last holiday season. Thinking about opening on thanksgiving. Anyone tried cellaring this beer?
Yes sir, IMHO it turn into a delightful cherry liqueur. Definitely sweet, much more subtlety cohesive and less beer-like with age. I'm sitting on 4 bottles of 2012, and when I drink one this year: I replenish and wait at least a year to drink. By trial and error, this is how my system worked: try it fresh. Drink it if I like it, if it has the body to age: buy a couple more and try it at one year. If it's better: keep aging the remainder and buy a fresh replacement. If not better: move it the " drink soon " shelf in my climate controlled , subterranean beer bunker. Aged: this beer makes a great gift to fellow advocates
I don't normally cellar but I loaded up on it last year and enjoyed one about every month. Drank the last one a couple weeks ago and it was great.
My notes from a one-year aged 12 oz bottle (although a few years ago): "1 year - appearance is the same. aroma and taste is not as cloyingly sweet. Body seems to have thinned a bit, as I don't have the same "syrupy" complaint. Overall, an improvement."
