Trouble with Terminal Gravity

    From my experience London ale III has performed very well when pitched at the proper rate and I ferment as close to 68 as I can. In most cases terminal gravity is reached in 5 days and is either at target or just past it. I always use a yeast calculator and it only takes a couple seconds to plug in your information to find out pitch rate. For those of you who do not have stir plates you can always use a growler and just do the swirl method on it, IMO that's much better than no starter at all. The calculators will also give you cell estimate based on using a stir plate or not. This is the calculator that I use: http://www.yeastcalculator.com. I am not trying to speak to you like you don't know what you're doing, just trying to throw some tips out there as I have used London ale III a lot and its been great for me. I also try to pitch just a little bit more than the calculator recommends. Cheers!

    Maple is one of those flavors that is difficult to incorporate into a beer. If you do a search of this forum you'll find many threads that also report failures like yours, but I recall a few reports of success too. Unfortunately I don't remember those successful methods to pass to be able to pass along to you here.

    Yea, I really think ppl use the cheap maple syrup to get a good maple character.

    The high quality maple syrup is 100% natural maple syrup.

    The cheap stuff is corn syrup with a bunch of natural and artificial flavors.

    Want maple syrup character in your beer? Use the cheap shit imo!

    When I use 1318 it performs about the same as 1056. Side by side, in the same wort, at the same pitching rates, they attenuate within 0.001 of each other.
