trying to sice up my saison

    i have a good amber saison that i want to spice up i used 2 ounces crystalized ginger at the end of the boil but didnt get much out of it. im thinking about putting fresh ground ginger in secondary. i also wan to use orange zest, coriander maybe chamomile. how much of these should i add and when?

    assuming you have a 5 gallon carboy?
    5-10 grams of each would be on the high end, in my opinion.

    i should add that my only experience w/spicing up a brew was putting small amounts of strong herbs like thyme, corriander and cinnamon in w/3-5 minutes left in the boil. so that's a lot different than what you're doing.

    but the general rule: you can always add flavour. you can't take it out.
    start small and give it a few weeks and taste.
