    so they are using the yeast that all these NE Hop IPA's are using and are using quality hops? Thats basically the recipe and a nice water profile.. i'd also lead that it seems Kane is using a different yeast then they used to use.. head high is more cloudy then i remember it being when it first came out.. ripple is cloudy, all the hop lab's are cloudy... seems this yeast a lot of places are using lets the hop profile hit the tongue better then the cleaner west coast style yeast/ipa

    i'm sure all my language in the above is all wrong, i'm not technical but i can spot a trend and all these places are doing some very similar stuff and have to be taking one another's beer and copying/mimicking the style/recipe... who makes the best one.. that's up to you, but tons of places are doing it at the moment

    Got to strike while the iron is hot and before the next wave in whatever takes over

    All very good points! We use a blend of yeast in our new IPAs. There's no perfect strain so why not harness the best attributes of multiple! Aside from that, IPAs are a very simple formula; pick a hop flavor profile you want,, build a water profile and grain bill that accentuate the part of the beer that you want to stick out while holding a body/mouthfeel that you target, and let the yeast do the rest!

    In my research for trying to homebrew a Hoppy Hazy IPA, it seems the London III yeast is often used for that style. Can you tell us if that is part of your blend? Appreciate the info and you may end up sorry you ever got involved in this thread to begin with.

    @GoGators always happy to talk beer with you folks! I can tell you that London III is NOT in our blend, but we do have a smash going with London III that should be done soon so we can see what it adds! I can also tell you that you are certainly correct that London III is used for this type of IPA. Rumor has it that some of the big NE guys use London III.

    Guess I have another NJ IPA I have to try! But hope it makes it way up to NNJ sooner than later, as I'm not down that way too often.

    The cloudiness doesn't come from yeast choice with these IPAs but is more about ratio of proteins from oats/wheats as well as dry hoping during fermentation. This causes issues with floculation making the beers seem cloud or hazy depending on technique.

    Dennis Creek Pale Ale is NOT worth the drive. However, Mountains is WELL WORTH the drive! Tuckahoe has come a long way man! The drive is worth it, the new facility is awesome, and there are plenty of styles on tap. The sours are great! And Chickie and Petes is less than a mile down the road for something to eat. They also have a great line up of craft beers- one of the best in South Jersey.

    The core beers have been updated, but are the approachable type of beers for some regulars and people wandering in off the street. They have a lot more beer on that is spectacular, but is small batches for now.

    and the hours are pretty limited right now. just so people dont try to just show up anytime. they are open friday nights from 5-9 and saturdays 12-6.

    Stopped by today, BIG crowd. Tasting room might be too small after all. Congrats to the guys and Amanda for the expansion and reception. Looks like a "cask event" was on the calendar for Feb 20th I believe. About 4 barrels along one wall, not sure if they were filled or not. Guys, you need at least ONE more register or PC for checking out!

    They have only been open a few weeks and the one POS is making things tough. Hope you enjoyed everything!

    And they may eventually add more days they are open- just not at this point.

    We went on Saturday, good sized crowd but we were able to get a high top table. Mountains was very good but I would not put it ahead of SOS or Heady just yet. The one complaint I had was the ridiculous policy of carding everyone. I had to go back to my car to get my DL and then the barkeep studied it as you would when an 18 year old had a fake ID. By the way, I am 54 years old! It just goes to show that you cannot teach common sense.

    I think you should blame NJ alcohol enforcement rather than the brewery. From what I understand after talking to various brewers in the state, undercover enforcement people have hassled newer places for not making everyone take a tour or checking id's, etc.

    Common sense to me is carrying your ID when you enter any establishment that sells alcohol- regardless of how old you are... Especially in the fine state of NJ! You're absolutely right, you can't teach common sense... And I guess some people always have to find something to complain about too!
