Two Hearted recipe

    Hey all, I am still trying to figure out what my second brew in a bag method beer is going to be (first was a Kolsch). Brew in a bag method uses the same ingredients as all grain (as far as I can tell). I was toying with the idea of attempting a Flower Power clone initially. However, since I can get Flower Power (sometimes at least) I was thinking of trying to brew an IPA that I love but can't get in RI. Two Hearted came to mind. I was wondering if anyone had a recipe they used that turned out pretty good.

    It's single hopped? Didn't know that. Any recommendations for how many ounces total? Addition times? Dry hoping at all?

    On HBT, this seems to be widely regarded as a great recipe.

    Original Gravity: 1.055
    10 lbs Pale Malt (2 Row) US (2.0 SRM) Grain 76.92 %
    2 lbs Vienna Malt (3.5 SRM) Grain 15.38 %
    8.0 oz Cara-Pils/Dextrine (2.0 SRM) Grain 3.85 %
    8.0 oz Caramel/Crystal Malt - 20L (20.0 SRM) Grain 3.85 %

    *mash at 150 F

    1.00 oz Centennial [9.50 %] (60 min) Hops 30.3 IBU
    0.50 oz Centennial [9.50 %] (Dry Hop 5 days) Hops -
    1.00 oz Centennial [9.50 %] (15 min) Hops 15.0 IBU
    1.00 oz Centennial [9.50 %] (5 min) Hops 6.0 IBU
    1.00 oz Centennial [9.50 %] (1 min) Hops 1.3 IBU

    A lot of people have said that Northern Brewer's Dead Ringer will pretty much get you Two Hearted.

    They show the recipe if you are looking for something to go off of. Two Hearted is indeed hopped only with Centennial.

    A note to the OP, the Dead Ringer from Northern Brewer used to be called Three Hearted until cease and desist orders happened. This kit is supposed to be as close as it gets.

    That's the second plug for Dead Ringer. The hops certainly echo what I am hearing about the Centennial. Thanks again!

    Go to Northern Brewer and look up the recipe for their Dead Ringer recipe.

    A couple years back Bell's production manager gave a home brew recipe for Two Hearted in one of Zymurgy's best of issues. Below is the recipe:

    10 lb Briess 2 Row
    2.83 lb Briess Pale Malt
    8 oz. Briess Caramel (40L)
    1.2 oz Centennial 9.1% aa (45 mins)
    1.2 oz Centennial 9.1% aa (30 mins)
    3.5 oz Centennial 9.1% aa (dry hop)

    White Labs WLP001

    OG: 1063
    FG: 1012
    SRM: 10
    IBU: 55
    Efficiency: 65%

    Suggests dry hopping one week into fermentation. Also suggests a 75 minute boil and a step mash and gypsum addition to the water if interested in the details.

    Awesome! Thanks so much. This looks like it's not over my head, may have to give it a shot. Although, I am nervous about doing a 5 gallon Brew in a Bag, in a 10 gallon kettle with that much malt.....

    You can also culture yeast from a Bells bottle.

    Done that, it was fun...and made a damn good Oberonish brew (not a clone, cascade instead of saaz). As well as a couple of other beers.

    In his case he is looking to clone a beer he cant get a hold of. I guess if he traded for it that would be different. Do you know what commercially available yeast their house yeast most closely compares to?

    It sounds like WLP001/WY1056/US05 yeast is close to the Bell’s Two Hearted Ale yeast.

    I tend to agree with this. At least as a possibility. Various english strains have been mentioned as the possible origin of Bell's house strain, but Bell's isn't saying, and I haven't tasted anything in a Bell's beer that couldn't be achieved with something very much like chico yeast, via mash conditions, fermentation conditions, or other ingredients.

    If you like Finestkind, you'll probably like Two Hearted. I did the HBT recipe posted above and it was damn close to the original.

    The Chico yeast is close, but not the same.

    If you are nervous about boilovers you can use a food grade silicone called FermCap. Your local homebrew store should have it but if not NB has it. We have used it a few times and it has not added any off tastes to our brew. It comes in a small bottle with a dropper in it and you just drop a few drops into your kettle when it starts to boil up and rise. It cuts the surface tension and it will settle down. No boilover.
